Don't worry, its easy!
Step 1: Go to your /themes folder.
Step 2: Find the folder "SAA_Default". Copy this file and give it a different name.
Step 3: Make all the customizations you want to these files.
Step 4: Open theme_info.php and change the values to match your new name, dates, and author links.
Step 5: Go to Admin CP -> Tools -> Theme Manager -> Add New Theme, and you'll see your new folder from the dropdown. Add the theme and you're done!
Special notes: if you only want to edit the css and/or images and icons and don't want to edit the actual template files, you can simply delete all of the .tpl files from your new theme, and SAA will automatically pull the standard unedited templates from the SAA_Default theme!
